Fighters can intercept missiles. not standard weapon projectiles.

How do fighters work? Do they just roam around the ship, or can you give them specific orders? Do bombers work the same as fighters?

You send them in "missions". Such missions can be defending, attacking etc.

Is there a video tutorial by any chance with some basic ideas how to build basic ships with fighter/bomber lunching capability and basic attack/intercept/defend ideas for fighter AI?

You will be able to deploy them on a variety of missions that mostly emphasize supporting roles.
Because of the utility of fighters you do not need to have much variety in components since the fighters themselves will come with that variety.
